Cottage Whip

I have been craving cottage cheese lately, which is not something I normally eat in mass quantities, but it has been years (yep, years) since I have eaten cottage cheese, so I figured, why not indulge the craving?

Bruce is decidedly anti-cottage cheese, so I have the entire carton all to myself!

Growing up, I used to eat cottage cheese with pineapple chunks in it, and I seriously thought that was the best thing ever.  A little sweet, a little tang, a pretty stellar breakfast or snack.

When I went to have breakfast, I found that I didn't have any pineapple, but I did have some frozen cherries...so I decided to blend it all together into a fantastic concoction I have dubbed the Cottage Whip!

It is so smooth, creamy and fruity, and not to mention healthy!  And it keeps you full for a long time, which is always a plus when you work from home...about 10 steps from the kitchen...


Cottage Whip

Ingredients:

1 c. low-fat cottage cheese
1 c. frozen fruit of choice
1 Tbs honey

Directions:

Throw your ingredients into your blender or food processor.  Pulse until the mixture is smooth and creamy.

You can use whatever fruit you like, I used cherries in the one pictured, but have also used blackberries, raspberries, and peaches.  You can also use your favorite alternative sweetener as well instead of honey.

  1. Tried this tonight as a dinner side, knowing that my toddler wouldn't like what I had made for the main course... It was perfect! She got fruit, dairy and protein all in one cup! Thanks for the idea, Lisa! :D
