Lemon Curd

If I try really hard, I may be able to remember the first time I ever had lemon curd.

I think I was in my early teens.  And it was either my mom or my older sister who had purchased a jar of the bright yellow goodness.  I was skeptical of something called "curd"...really?  What kind of a name is that?  It did not sound appetizing...  but it was lemon... and I love lemon...

So, I tried it.

And I am pretty sure I was taken away on a little cloud up to lemon-infused paradise.  It was divine!  So smooth!  So creamy!  The perfect combination of sweet and tart in a little glass jar.  I no longer cared that it had an unfortunate name, lemon curd and I were going to get along very well together.

And, it is surprisingly easy to make at home!  So now you can enjoy it whenever you please!  And I am pretty sure the pleasure is all mine right now!


Lemon Curd

Ingredients:

1/4 c. lemon juice
2 tsp lemon zest
1/3 c. sugar
4 egg yolks
3 Tbs unsalted butter

Directions:

Combine all ingredients in the top of a double boiler. Stir constantly with a whisk, until mixture thickens, about 7-10 minutes. Remove from heat, cover and keep in the refrigerator until cool.

This is amazing on biscuits, scones, pancakes, waffles, ice cream, or just straight from the jar on a spoon!
