Quickest Dinner Rolls

The husband and I took a quick day trip to Shoshone Falls this past weekend.  The falls are called the "Niagara of the West", and my husband, who has lived in Southeast Idaho his entire life had never been there before.

We got to enjoy some time alone, sans puppies, which was simply lovely!  And while the weather wasn't fantastic, it was still warmer than it has been in the past few weeks, and it was exciting to see spring in full bloom.

On days where most of your time is spoken for, quick doesn't get any quicker than these delicious dinner rolls.  These rolls come together in about 30 minutes, and are delightfully dense without being heavy.  They are great with any main dish, can be used for sandwiches, or just eaten by themselves any time you want.  They come together so fast that you will find yourself making them over and over again.




















Quickest Dinner Rolls

Ingredients:

1 1/8 c. warm water 
1/3 c. oil
2 Tbs yeast
1/4 c. sugar
1/2 tsp salt
1 egg
3 1/2 c. flour

3 Tbs butter (melted)

Directions:

Preheat oven to 400.

Mix the water, oil, yeast, and sugar together in a medium bowl, and allow to rest for 10 minutes until the mixture has bubbled and foamed up.  Add the salt, egg, and 2 cups of the flour.  Mix until combined, then add remaining flour 1/2 cup at a time until it comes together.  The dough will still be sticky, that is normal!

Cover with a cloth, and let rest for 10 minutes.  Meanwhile, prepare a cookie sheet with either parchment paper or a silicone baking mat.  Spray your hands with cooking spray (to prevent the dough from sticking to your hands), and form the dough into balls.  The size really depends on how big you want your rolls.  You can do 12 large rolls, or 18 small rolls.

Place on baking sheet, and let rest for another 10 minutes before baking.  Brush tops of rolls with melted butter, and bake for 10 minutes, or until golden.  Brush with additional melted butter, if desired.

  1. Love this recipe! not only because ts so easy but also because you can do so much with these. you can add some chocolate or even chicken and make it your own!
