Shredded Ranch Chicken Tacos

Today's recipe comes from my fabulous bestie Kelly.  She told me about this ranch chicken a couple weeks ago when we were chatting online (perils of long-distance friending...), and I was excited to try it, but had already made my monthly menu for January, so I figured I would have to push it back at least until February...sadness!

That was, until I noticed that I had already planned on making another "ranch chicken" recipe this month...nobody would notice if I just changed what kind of ranch chicken I was making, right?

Well, I did it.  And they are delicious!  The shredded chicken is super easy, tasty, and great in just about anything!  Salads, burritos, quesadillas, tacos, pasta, sandwiches, soup, you name it!  I made it into tacos, and Bruce made a quesadilla.  Really, you should add this to your menu rotation, you won't be disappointed.


Shredded Ranch Chicken Tacos

Ingredients:

8-10 chicken tenders (or 4-5 breasts)
2 c. chicken broth
1 packet Ranch dressing mix
1 packet taco seasoning

Directions:

Whisk together the chicken broth, dressing mix and taco seasoning until combined.  Place your chicken in your crock pot and pour the mixture over the chicken.  Cook on high for 3 hours, or low for 5 1/2 hours.

Remove the chicken from the crock pot and shred with two forks.  Return to the crock pot and allow it to cook another 15 minutes or so.

Use in tacos, burritos, sandwiches, soup, quesadillas, whatever you want!
