Scandinavian Almond Bars

These almond bars were a holiday staple in our house growing up, and I always loved them.

It may have something to do with the fact that I think almond flavoring is the bomb-diggity, but I digress.

These are light, crisp, and have the perfect almond taste!


Scandinavian Almond Bars

Ingredients:

1 3/4 c. flour
2 tsp baking powder
1/4 tsp salt
1/2 c. butter (softened)
1 c. sugar
1 egg
1/2 tsp almond extract
Milk
1/2 c. sliced almonds, roughly chopped

Icing:

1 c. powdered sugar
1/2 tsp almond extract
1-2 Tbs milk

Directions:

Preheat oven to 325.

Stir together flour, baking powder and salt.

Beat butter and sugar til light and fluffy.  Add egg and extract and mix until smooth.  Stir in the flour mixture and beat until the dough comes together.

Divide dough into fourths.  Roll each fourth into a 12x3-inch rectangle and place 2 on a silpat lined baking sheet (or ungreased baking sheet).

Brush with milk and sprinkle with chopped almonds.  Bake 12-14 minutes or until the edges are lightly browned.  While the cookies are still warm, slice them diagonally in 1-inch strips.

Make icing by mixing powdered sugar, extract and enough milk to make your desired consistency.

Cool on a wire rack and then drizzle the icing over them.
