Candy Cane Cookies

It's not Christmas until the candy cane cookies are made.

Which officially makes it Christmas!

These peppermint cookies are soft and fluffy with a charmingly minty glaze.  You can even add crushed candy canes to sprinkle over the glaze for an added peppermint kick!  And what a fun, festive cookie for the kids to help make.  Perfect to leave out for Santa on Christmas Eve!


Candy Cane Cookies

Ingredients:

1 c. butter (softened)
1 c. powdered sugar
1 egg
1/2 tsp vanilla
1/2 tsp peppermint extract
dash salt
2 1/2 c. flour

Glaze:

1 c. powdered sugar
1/2 tsp peppermint extract
2-3 Tbs water

Directions:

Cream together the butter and sugar until light and fluffy.  Add the egg and extracts until fully incorporated.  Mix in the flour and salt until the dough is fully formed.

Separate the dough evenly into two bowls.  Add a few drops of red gel food coloring to one of the bowls and mix it in thoroughly.  Chill both bowls of dough for half an hour or until easy to work with.

Preheat oven to 375.

Use a teaspoon of dough to form a 4-inch rope.  Twist a rope of red and a rope of white together and form the shape of a candy cane.  Place on a silpat lined (or greased) cookie sheet about an inch apart.

Bake 7-10 minutes or until the bottom edges are barely golden (you don't want them to brown).

Set on cooling racks.

Make the glaze by combining the ingredients until they are of brushing consistency.  Brush the glaze over the cooled cookies.  Sprinkle with crushed candy canes if desired.
