Holiday Spice Curls

I love rolled wafer cookies.

They don't even have to be filled with anything (like Pirouette's), just the plain rolled wafer cookie suits me just fine.

These cookies are similar in theory to those.  They are light, crispy, and perfect with a cup of cocoa.

I recommend only baking two cookies at a time, this will allow you time to roll the cookies before they harden.


Holiday Spice Curls

Ingredients:

2 egg whites
1/2 c. sugar
1/2 c. flour
1 tsp cinnamon
1/4 tsp ginger
pinch cloves
1/4 c. butter (melted and cooled)

Directions:

Preheat oven to 350.

In a medium bowl, beat the egg whites with a hand mixer until soft peaks form.  Add sugar and beat until stiff peaks form.  Combine the flour and spices and stir into the egg whites.  Stir in the cooled, melted butter until uniform.

I highly recommend using silpat mats (or something like it), but you can use a well greased pan as well.

Drop a small mound of batter (about 2 teaspoons full) on the pan and spread with the back of a spoon until it forms about a 3-4 inch circle (you will want this to be thin).

Bake 8-10 minutes.  Immediately loosen and roll around a greased handle of a wooden spoon (you could probably just roll it in on itself, but I like using the spoon).  Slide the cookie off and cool on a wire rack.  Repeat with remaining batter.

Now you can fill them with your favorite chocolate, whipped cream, or even cheesecake filling!  But they are also delightful as is.
