Eggnog Muffins

When contemplating what to make for Christmas morning breakfast, it didn't take me long to decide upon eggnog muffins.

I had made some blueberry eggnog muffins a couple months ago, and while those were amazing, I decided to go with a "plain Jane" version for Christmas (honestly, you can't call these "plain Jane", because they are heavenly, but I digress).

These muffins are fluffy, with a kick of nutmeg and a lovely streusel topping that takes these muffins to the next level!


Eggnog Muffins

Ingredients:

2 eggs
1 c. eggnog
1/2 tsp vanilla
1/2 tsp rum extract
1 tsp nutmeg
2 tsp baking powder
2 1/4 c. flour
1 c. sugar

Topping:

1/3 c. flour
1/3 c. sugar
1/2 tsp nutmeg
2 Tbs butter

Directions:

Preheat oven to 375.

Beat the eggs, eggnog and extracts together until smooth.  Stir in the flour, sugar, baking powder and nutmeg until fully incorporated and the batter is thick.

Spoon into a greased muffin tin (I filled mine almost to the top).

Make the streusel topping by cutting the butter into the flour, sugar and nutmeg until it resembles coarse crumbs.  Sprinkle on top of the batter in the muffin tin.

Bake 20-22 minutes or until the edges are barely golden and a toothpick inserted into the middle of one of the muffins comes out clean.

Allow the muffins to cool.
