Coconut Mango Overnight Oats

I've made overnight oats a lot in the past (before this blog was around).

But this is by far my favorite recipe for overnight oats that I have come up with.  I love coconut and mango, and the combination of the two is a serious winner!

I made a large batch in a quart mason jar, so I can eat it for a couple days, but you can halve the amounts and make it in a pint jar for a single serving.















Coconut Mango Overnight Oats

Ingredients:

1 1/3 c. oats
1/2 c. plain Greek yogurt
1 1/3 c. milk
2 tsp honey
1/2 tsp coconut extract
1 c. mango (cubed)
unsweetened coconut (for sprinkling)

Directions:

Place the oats, yogurt, milk, honey, and extract in your mason jar.  Put on the lid and shake vigorously until all the ingredients are mixed.  Stir in the mango thoroughly with a spoon.  Replace lid and allow the oats to sit overnight.

Dish up some of the oats and sprinkle with unsweetened coconut before serving.
