No-Bake Peanut Butter Energy Bites

I had every good intention of putting up a new recipe yesterday, but life got away from me.

Sometimes when things are busy and you just need a quick pick-me-up, it is good to have something like this on hand.  These bites are just the shot of energy that you need.  Oats stick to your ribs and digest slowly, and the peanut butter gives you an added boost of energy.

You can make these babies in less than 5 minutes!


No-Bake Peanut Butter Energy Bites

Ingredients:

1 1/2 c. quick oats
1/2 c. creamy peanut butter
1/2 c. honey
1/2 tsp cinnamon
2 Tbs mini chocolate chips

Directions:

In a food processor or mixer (we have a Ninja that has a food processor attachment with a dough blade), mix oats, peanut butter, honey and cinnamon until it comes together in a thick dough.  Stir in mini chips. (If it is too sticky, add more oats.  Too dry? add more peanut butter.)

Roll dough into balls and store in an airtight container in the refrigerator.
