These Orange-Ginger Glazed Carrots are a delicious way to get everyone to eat their vegetables. They aren't overly sweet, and have a spicy kick to them that is a delightful surprise.
Orange-Ginger Glazed Carrots
Ingredients:
2 lbs carrots (cut into 2 inch sticks)
1 c. water
1/2 c. brown sugar
1/4 c. maple syrup
1/2 tsp ginger
1/4 tsp cinnamon
1/4 tsp salt
1/4 tsp pepper
Directions:
Mix ingredients in a medium saucepan and bring to a boil, stirring occasionally. Once boiling, reduce heat and simmer, partially covered for 25 minutes or until the carrots are tender.
