My grandmother passed away last week, I started a new term for school, it has started snowing..SNOWING!
Anyway, sometimes when things get busy, you just need a quick, easy, dependable recipe that you can whip up and stick on the table. This would be one of those recipes. It is light, and tasty. Perfect for lunch or dinner.
Ingredients:
3 chicken breasts
1 Tbs olive oil
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
2 cloves garlic
1/4 c. butter
2 c. orzo pasta
2 Tbs lemon juice
2 tsp basil
4 c. chicken broth
Directions:
Preheat oven to 375.
In a medium skillet, heat olive oil on medium-high heat. Season chicken with the salt, pepper and garlic powder, then cook in the olive oil until golden brown on each side. Set aside.
In a medium sauce pan, melt the butter. Add the garlic and cook until fragrant. Stir in orzo. Cook until golden. Add lemon juice and basil. Cook 1-2 minutes more.
Pat orzo into a 13x9 pan and top with the chicken. Pour the chicken broth over the chicken and orzo.
Bake for 45-50 minutes or until the liquid has been absorbed.
