Turkey Pumpkin Chili

As I was checking out at the grocery store this morning, the cashier looked at me and said, "Are you ready for summer to be over?"

Enthusiastically, I said, "Yes!"

"Good." he replied, "because as soon as I ring up these items of yours, summer will officially be over."

Maybe it was the myriad of fall-ish items I was purchasing that cued him into the fact that I am more than ready for Autumn, or maybe he's just omniscient.

I woke up with pumpkin on my mind.

So, pumpkin you shall get!


Turkey Pumpkin Chili

Ingredients:

2 lbs ground turkey
1 Tbs oil
1 small yellow onion (chopped)
2 cloves garlic
2 tsp cumin
15 oz can pumpkin
1 1/2 tsp chili powder
1/2 tsp chipotle chili powder
1 tsp garlic powder
2 Tbs taco seasoning
2 cans white beans
2 c. chicken broth
1 tsp Italian seasoning
2 bay leaves

Directions:

Brown turkey and place in crock pot.  Heat oil in a skillet and add onion and garlic, cook until translucent, add cumin and cook 1 minute more before placing in crock pot.

Add remaining ingredients (except bay leaves) to crock pot and mix well.  Place bay leaves on top and cover with lid.  Cook on high for 4 hours (or low for 8 hours).

You can adjust the seasonings to your taste before serving.
