Cheesy Sausage Mix-up

Deciding what to make for dinner can be difficult.

You can pour over recipes and still come up empty-handed and hungry.

Well, with this tasty meal at your fingertips, you can take care of that problem!  Bruce is not the biggest fan of sausage, onions, or tomatoes, but even he gave it a 7 out of 10!  Which is impressive for someone who doesn't care for 3 or more of the ingredients.


Cheesy Sausage Mix-up

Ingredients:

1 Tbsp olive oil
1 lb smoked turkey sausage (sliced)
1 1/2 c. onion (diced)
2 cloves minced garlic
2 c. chicken or vegetable broth
1 (10 oz) can Ro-Tel tomatoes and green chiles
1/2 c. heavy cream
8 oz uncooked pasta
1/2 tsp basil
1/2 tsp salt
1/2 tsp pepper
1 1/2 c. Monterey Jack cheese (shredded)


Directions:

Add olive oil to an oven-safe skillet over medium-high heat. Add sausage and onions and cook until lightly browned. Add garlic and cook another minute.

Add broth, tomatoes, cream, pasta, basil, salt and pepper. Bring to a boil, cover skillet, and reduce heat. Simmer until pasta is tender (about 15 minutes).

Remove skillet from heat and stir in 1 cup cheese. Top with remaining cheese and broil until cheese is melted and golden.
