Chocolate Peanut Butter Chip Cookies

When Bruce and I were at the store the other day, I picked up a bag of peanut butter chips from the baking aisle.  Bruce immediately perked up and asked what they were for.  And proceeded with that line of questioning for the next two days.

Quite frankly, I wasn't sure what I would be doing with them, just that my husband loves peanut butter, and that I'd like to do something fun with them.

So I baked up these beauties!  They are a chocolatey chocolate chip cookie with peanut butter chips thrown in for effect.

These are also special because they are the last sweets that Bruce and I will be having before we go off of excess sugar for a month (yikes!).  Come May first, we'll be cutting out the sweets, and after that we'll only be having them on special occasions.  Wish us luck!

But for now, we'll take a cookie and a tall glass of milk!


Chocolate Peanut Butter Chip Cookies

Ingredients:

2 c. flour
3/4 c. cocoa
1 tsp baking soda
1/2 tsp salt
1 1/4 c. butter (softened)
2 c. sugar
2 eggs
2 tsp vanilla
1/2 c. milk chocolate chips
1 2/3 c. peanut butter chips

Directions:

Preheat oven to 350.

Cream the butter and sugar until light and fluffy.  Add the eggs and vanilla until well incorporated.  Mix in the flour, cocoa, baking soda and salt until well mixed.  Stir in the chips until evenly distributed.

Place tablespoon-sized balls of dough on a silpat lined baking sheet.  Bake 8-10 minutes.  They will be very soft still, allow them to cool on the baking sheet for 2-3 minutes before moving to a cooling rack.
