Red Velvet Waffles with Cream Cheese Whip

Red velvet has been all the rage for the past few years, and for good reason.  Have you tried it?? It's delicious!  Even my husband, who proclaims not to really care for it, always manages to eat a lot of it when red velvet-something-or-other is in the house.  And these waffles were no exception.

What really makes these waffles amazing is the cream cheese whip that is put on top.  Oh my heavens, it is sooo good!  Forget the waffles, I could eat that stuff with a spoon!  Except, I DO want the waffles too, so, I recommend sticking with the original plan of having them together.

Red Velvet Waffles with Cream Cheese Whip

Ingredients:

Waffles:

3/4 c. flour
1/4 c. cornstarch
1/2 tsp baking soda
1/2 tsp salt
1 1/2 Tbs cocoa powder
1 Tbs + 1/2 tsp sugar
1 c. buttermilk
1/3 c. vegetable oil
1 egg
1 tsp red velvet emulsion

Cream Cheese Whip:

6 oz cream cheese (softened)
6 Tbs butter (softened)
1 c. powdered sugar
1 tsp vanilla
1/4-1/2 c. milk (or more depending on your desired consistency)

Directions:

Sift together the dry ingredients.  Whisk in the buttermilk, oil, egg and emulsion until the mixture is smooth.  Allow the mixture to sit for about 15 minutes before cooking.

Cook waffles on a preheated waffle iron (they will look better on one side than the other...just as an FYI)
 Make your cream cheese whip by mixing the butter and cream cheese with a hand mixer until it is light and fluffy.  Add the vanilla.  Whip in the powdered sugar and milk until you reach your desired consistency.

Pair the waffles with the cream cheese whip for a decadent breakfast treat!
