Cute as a Button Cookies

One of my friends is having a baby.

Well, actually, a LOT of my friends are having babies, but only one of them is due sometime in the next couple weeks.  So, naturally, we had a baby shower for her and her little girl who will be joining the world at the beginning of March.

When asked to bring some cookies for the shower, these adorable button cookies popped into my head.  I wanted a light almond cookie that would be refreshing and fun, and as a bonus, they really are as "cute as a button"!




















Cute as a Button Cookies

Ingredients:

3/4 c. butter (softened)
3 oz cream cheese (softened)
1 c. sugar
2 eggs
1/2 tsp vanilla
1/2 tsp almond extract
2 3/4 c. flour
gel food coloring

Directions:

Cream together the butter, cream cheese and sugar until fluffy.  Mix in the eggs and extracts until fully incorporated.  Stir in the flour and mix until the dough comes together.  Add the food coloring until you achieve your desired color.

Wrap the dough in plastic wrap and chill for at least 2 hours.

Roll out your dough on parchment paper until it is about 1/4"-1/8" thick.  Using a small cookie cutter (I used the circle insert for my linzer cookie cutter), cut out your circles and place them on a silpat lined cookie sheet (you don't have to space them too far apart).  Once you have all your circles, take a round tip icing tip, and using the large opening, slightly indent in the center of your circles (to create the button ridge) then, use the small end to poke your button holes.

Place the cookie sheet in the refrigerator for 15 minutes so the dough can chill and firm up once more.

Preheat oven to 350.

Bake the cookies for 8-9 minutes.
