They take all the guesswork out of the everyday breakfast routine. I am not someone who cares much for boxed cereal (might have something to do with the fact that I don't like drinking milk 98% of the time), and I don't always have the time (or inclination) to make something slightly more complicated.
I love being able to put these together at night, then have oats for breakfast for the next 2 days.
These strawberry coconut overnight oats are light and filling, the perfect way to start my day!
Strawberry Coconut Overnight Oats
Ingredients:
1 1/3 c. oats
1 1/3 c. milk
1/3 c. plain Greek yogurt
2 Tbs honey
1/4 c. unsweetened coconut (or sweetened, if you prefer)
1 tsp coconut extract
1/3 c. pureed strawberries
additional coconut and strawberries for sprinkling
Directions:
Place the oats, yogurt, milk, honey, coconut, pureed strawberries, and coconut extract in your mason jar (this is a doubled recipe and fits in a quart jar). Put on the lid and shake vigorously until all the ingredients are mixed. Allow the oats to sit overnight in the refrigerator. Top with additional coconut and strawberries if desired.
