Chipotle Ranch Dressing

There are a lot of different ways to make a taco salad.

When I was a teenager, my high school would offer taco salads as one of the lunch options.  It came in a large fried taco shell with lettuce, meat, beans, cheese and your choice of dressing.  

I usually opted for just topping it with salsa and sour cream instead of the typical ranch dressing that the other kids used...because I am actually not a fan of ranch dressing...  I know!  People all over the place are appalled, I am sure.

But this chipotle ranch dressing is phenomenal!  I could eat this on all my salads for the rest of forever.  And as a plus, you can adjust the heat level by adding more chipotle peppers, or fewer, as it were.


Chipotle Ranch Dressing

Ingredients:

1/2 c. mayonnaise
1/2 c. plain greek yogurt
1 Hidden Valley Ranch dressing packet
1/4 tsp cumin
1/2 c. milk
1 chili in adobo + 1 1/2 tsp adobo sauce

Directions:

Place ingredients in a blender and pulse on high until everything is smooth and creamy.

Pour on salad, use as a dipping sauce for chicken, fries, vegetables, flautas, or whatever suits your fancy.
