Perfectly Soft Chocolate Chip Cookies

I think everyone has had the dreaded experience of making chocolate chip cookies and something goes wrong...they're too flat, crunchy, don't spread, or too oily.  Often it stems from an issue with having the wrong combination and amount of ingredients, and sometimes it's just bad luck.

These cookies are perfect!  They are super soft and contain two different kinds of chocolate chips, just to mix it up a little bit.


Perfectly Soft Chocolate Chip Cookies

Ingredients:

1 1/2 c. butter
1 1/4 c. sugar
1 1/4 c. brown sugar
2 tsp vanilla
3 eggs
4 1/4 c. flour
2 tsp baking soda
1 tsp salt
2 c. milk chocolate chips
1 c. semi-sweet chocolate chips

Directions:

Preheat oven to 350.

Cream together the butter and sugars until fluffy.  Add the vanilla and eggs and beat until smooth.  Sift together the flour, baking soda and salt.  Add the the creamed mixture and beat until the dough comes together and is soft and pillowy.  Stir in the chocolate chips with a wooden spoon.

Bake on silpat-lined cookie sheets for 10-12 minutes or until just turning golden around the edges.  The cookies may seem a tad underdone, but as they sit, they will firm up as much as they need to and be perfect!  Do not over bake.

Cool on wire cooling racks.
