The overnight oats are flavored with lemon juice and lemon zest, then in the morning, it is layered with blueberries (fresh or thawed). So tasty! It is light and refreshing and a perfect way to start the day.
Lemon Blueberry Overnight Oats
Ingredients:
1 1/3 c. oats
1/2 c. plain Greek yogurt
1 1/3 c. milk
3 tsp lemon juice
2 Tbs honey
1 tsp lemon zest
1 1/4 c. blueberries
sliced almonds (or topping of choice)
Directions:
Place the oats, yogurt, milk, honey, lemon juice and zest in your mason jar (this is a doubled recipe and fits in a quart jar). Put on the lid and shake vigorously until all the ingredients are mixed. Allow the oats to sit overnight in the refrigerator. In the morning, top with blueberries and additional zest if desired.
