Creamy Chicken Soup with Rice

I don't know about any of you, but when I was in kindergarten, we read this book called "Chicken Soup with Rice" by Maurice Sendak.  Someone had turned it into a song, and we learned the song and sang it, what seemed to be, a lot.

As a result, I still remember bits of the song, and will occasionally have it pop into my head.  This was the inspiration for today's dish, Creamy Chicken Soup with Rice.

This soup is creamy and flavorful, not to mention hearty and delicious.  Perfect for a cold January day, although, according to the book, chicken soup with rice is good any time of the year, and with this recipe, I am inclined to agree.


Creamy Chicken Soup with Rice

Ingredients:

5 chicken tenders (cooked and diced)
2 medium-sized carrots (sliced)
2 stalks celery (chopped)
1 Tbs oil
1/2 c. onion (chopped)
1 clove garlic
3 3/4 c. chicken broth
1/3 c. rice
1 tsp rosemary
1 tsp sage
1/4 tsp pepper
1/2 tsp salt
3 T flour
3/4 c. cream

Directions:

In a medium pot, heat the oil and saute the carrots, celery and onions until the onions become translucent.  Add the garlic and cook another minute.

Add the chicken broth, rice, diced chicken, rosemary, sage, salt & pepper and let the mixture come to a boil.  Continue to cook until the carrots can be pierced with a fork and the rice is cooked (10-12 minutes)

In a small bowl, whisk together until there are no clumps.  Stir this mixture into the soup and stir until fully incorporated.  Cook another 2 minutes, or until it thickens slightly.

  1. I love those poems! (I had no idea that there was a song, though.) Anyway, I just wanted to say that I loved this soup! Thanks for sharing your recipe. My husband and baby girl and I just gobbled it up for dinner tonight. Gooood stuff. (P.S. I don't know if you remember me, but I'm good friends with the Barton twins. And also your sister-in-law, Rebecca, is my 2nd cousin. Small world.)
