No-Bake Chocolate Cherry Energy Bites

Sometimes, you just don't have time to eat anything substantial during the work day.  When those days come around, I like to grab a quick no-bake energy bite.

These chocolate cherry bites are full of oats, unsweetened coconut, dried cherries and chocolate!  A great little boost during your hectic day!




















No-Bake Chocolate Cherry Energy Bites

Ingredients:

1/2 c. almond butter
1/2 c. honey
1 1/2 tsp vanilla
1 c. oats
1/4 c. cocoa
1/3 c. sliced almonds
1/2 c. dried cherries (chopped)
1/2 c. chocolate chips
1 c. unsweetened coconut

Directions:

In a food processor or mixer (we have a Ninja that has a food processor attachment with a dough blade), mix oats, almond butter, honey, vanilla, cocoa, almonds, cherries, chocolate chips and coconut until it comes together in a thick dough. If it is too sticky, add more oats.  Too dry? add more honey.

Roll dough into balls and store in an airtight container in the refrigerator.
