I let the blackberries sit overnight in the oats, but if you prefer not to have the purplish color in your breakfast, you can easily allow the oats to sit on their own and add the berries right before you eat them. I personally think the color is fun, and have no qualms about eating purple oatmeal!
You can sprinkle anything you want on top of them before serving as well; coconut, chocolate chips, puffed rice cereal, cinnamon, the possibilities are endless! I opted for some sliced almonds. Yum!
Blackberry Vanilla Overnight Oats
Ingredients:
1 1/3 c. oats
1/2 c. plain Greek yogurt
1 1/3 c. milk
1 tsp vanilla
2 Tbs honey
1 1/4 c. blackberries
sliced almonds (or topping of choice)
Directions:
Place the oats, yogurt, milk, honey, and extract in your mason jar (this is a doubled recipe and fits in a quart jar). Put on the lid and shake vigorously until all the ingredients are mixed. Place the blackberries on top of the oat mixture, but do not shake or stir them in unless you want it all fully combined Replace lid and allow the oats to sit overnight.
Top with desired toppings.
