Apricot Chicken

This chicken makes for a light and delicious meal at any time of year.

I served this over couscous with a side of steamed vegetables on one of the evenings when Bruce was not at home (he isn't a fan of apricots...or couscous for that matter), so I got to enjoy this meal all by myself, and I didn't mind one bit!


Apricot Chicken

Ingredients:

 8 chicken tenders
 1 1/4 c. low-sodium chicken broth
 3/4 c. apricot preserves
 1 Tbs soy sauce
 1 Tbs cornstarch
 1 Tbs water

Directions:

In a large skillet, brown the chicken on both sides.

Add chicken broth,preserves, and soy sauce. Simmer for 20 minutes or until chicken is done. Remove chicken from skillet. Add 1 tablespoon cornstarch and 1 tablespoon water to sauce and stir until thickened.

Pour sauce over the prepared chicken and serve with rice, couscous or quinoa.
