Eggnog Cookies with Eggnog Frosting

I love eggnog, but I did not grow up in an eggnog-loving household.  In fact, I think I only have one sibling who enjoys eggnog like I do.

I am lucky that my husband loves eggnog too.

Last year, I made eggnog cookies with an eggnog glaze for him, and he went crazy for them!  A few people went crazy for them actually.  I however didn't think they tasted enough like eggnog, and I didn't care for the glaze...all in all, I was determined to fix my recipe this year, and by jove, I think I've done it!

These cookies are perfectly soft, and delightful on their own, but topped with the eggnog frosting, and they are positively an eggnog-lovers dream come true!





Eggnog Cookies

Ingredients:

2 1/4 c. flour
2 tsp baking powder
3/4 tsp nutmeg
1/2 tsp cinnamon
3/4 c. unsalted butter (softened)
1/2 c. sugar
1/2 c. brown sugar
2 eggs
1 tsp vanilla
1/2 tsp rum extract
1/2 c. eggnog

Directions:

Preheat oven to 350.

Cream together butter, sugars, and eggs.

In a separate bowl, sift together the flour, baking powder, nutmeg, and cinnamon.  Add to the butter mixture and beat together.  Add extracts and eggnog and mix thoroughly.

Place tablespoon-sized balls on a silpat-lined or greased cookie sheet.

Bake 13 minutes or until the edges are just beginning to brown.

Let cool completely before frosting.

Eggnog Frosting

Ingredients:

1/2 c. butter (softened)
3 Tbs eggnog
1/2 tsp rum extract
2 c. powdered sugar

Directions:

Using a hand mixer, beat the butter, eggnog, rum extract and powdered sugar together until uniform.  For a stiffer frosting, add more powdered sugar.















Enjoy!
