ChiBacon Gnocchi

My husband Bruce named this particular dish this evening.

Bruce had never had gnocchi before, but I was fairly confident that it would be something he'd like, as long as it was introduced to him in a safe way, and combined with other things that he loves, such as chicken and bacon...and thus, ChiBacon Gnocchi was born.

I did throw in some broccoli in an attempt to make it a bit more of a rounded meal, and I have to say, it was delightful.  Bruce immediately deemed it a 10 out of 10.


ChiBacon Gnocchi

Ingredients:

1 pkg gnocchi (17.6 oz)
2 c. frozen broccoli
2 c. cooked chicken (diced)
1/2 c. crumbled cooked bacon
1 - 15 ounce jar Alfredo sauce
1/2 c. Monterey Jack cheese
1 c. shredded mozzarella cheese

Directions:

Preheat oven to 400.

Cook the gnocchi according to the package directions and drain.

Stir together the gnocchi, broccoli, chicken, bacon, Monterey Jack cheese, and Alfredo sauce. Spoon into a casserole dish.

Top with mozzarella cheese and bake for 20-22 minutes. Turn oven to broil and heat for 2-3 minutes or until the cheese starts to brown.
