Caramel Apple Cookies

Caramel.

Apples.

Cookies.

Tis that lovely time of year for apple picking, and caramel dipping.  Now that flavor has been secured inside these super chewy cookies!


Caramel Apple Cookies

Ingredients:

1 c. butter (softened)
1 c. sugar
1 c. brown sugar
2 eggs
1 tsp vanilla
2 3/4 c. oats
2 c. flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp apple pie spice
2 c. finely chopped apples
12 oz. bag Caramel bits

Directions:

Cream butter and sugars until smooth.  Add eggs and vanilla and mix thoroughly.

In a food processor, blend oats until finely ground.  Sift with other dry ingredients and add to wet ingredients.  Stir in apples and caramel bits.

Refrigerate 1 hour.

Preheat oven to 350.

Spoon dough in golf ball-sized balls on a silpat (or greased) cookie sheet and bake for 11-12 minutes or until edges are just golden.  Let rest on the cookie sheet for a few minutes before placing on a cooling rack as the cookies will be extremely soft.
