Apple Cider Truffles

I love apple cider.

There was a period a few years ago where I would drink it every morning while I ate my oatmeal for breakfast...for almost a year.

I love the spices associated with apple cider, they're just so warm and comforting.

I had made Apple Cider Syrup a few days ago to go along with some Pumpkin Waffles I made for dinner, and it was then that I decided I wanted to try to make an Apple Cider Truffle.

Bruce tried one when he came home from camping this afternoon, and his first word was, "Daaaang!".  So I'm pretty sure they were a hit.





















Apple Cider Truffles

Ingredients:

1 package Golden Oreos
6 oz. softened cream cheese
1/4 c. applesauce
1 package spiced apple cider mix

Coating:

16 oz. vanilla candy coating
1 tsp cinnamon

Directions:

In a food processor, crush Oreos into course crumbs.  In a separate bowl, mix cream cheese, applesauce and cider mix until uniform.  Mix in crushed Oreos until incorporated.

Roll mixture into small balls and place on a silpat lined cookie sheet and place in the freezer for at least 2 hours.

Melt the candy coating according to the package directions (I use the double-boiler method).  Once it is completely melted, add the teaspoon of cinnamon and mix it in thoroughly.

Remove the dough from the freezer and using a toothpick, dip each ball into the candy coating, turning it to cover the entire surface.  Remove excess coating by lightly tapping along the side of the bowl and then place it back on the baking sheet to firm up. 

You should store these in the refrigerator or freezer.
