Apple Macaroon Cake

This is a recipe from my childhood.

My mother would occasionally make this cake, and I always loved the shiny, crisp top, and the sweetness of cinnamon mixed with the warm apples.

This cake is easy to make, but is sure to impress, and is delicious served with a scoop of vanilla ice cream on the side.






















Apple Macaroon Cake

Ingredients:

4-6 apples (peeled and sliced)
1 1/2 c. sugar (divided)
1 tsp cinnamon
2 eggs
1 c. flour
1/2 c. butter (melted)
1 tsp vanilla

Directions:

Preheat oven to 300.

Place sliced apples in a 9x9 pan.  Sprinkle with 1/2 c. sugar and the cinnamon.

Beat eggs well.  Add remaining sugar, flour, and melted butter to the eggs and mix thoroughly.  Pour over the apples.

Bake at least one hour, until the batter is crisp, shiny, and macaroon-like.
