When you come home with 40 pounds of apples, you have some serious decisions to make.
What are you going to do with your proliferation of apple-y goodness?
I knew right away that a portion of the apples would be made into pie filling, apple cake, and bread. But one of my favorite solutions is always apple butter.
I have made apple butter in the fall for a few years now, and it always makes me want to snuggle up in a blanket with a book, and watch the leaves fall from the trees in great cascades of color (apple butter is pretty powerful stuff for the imaginary mind).
Apple Butter
Ingredients:
3 pounds apples (cored and sliced)
1/2 c. sugar
1/2 c. brown sugar
1 1/2 tsp cinnamon
1/8 tsp cloves
1/8 tsp allspice
Directions:
Place sliced apples in your crockpot. Sprinkle sugars and spices over the apples and mix thoroughly.
Turn your crockpot on low for 9-10 hours, stirring occasionally.
Use an immersion blender to puree the soft apples, and cook uncovered an additional 1-2 hours.
