Overnight Oats with Lemon Blueberry Compote

Breakfast is one of those things that I often forget about, that is, unless I am super excited abut what it is that I get to eat.  Which is why I stocked up on oats, yogurt, and milk a couple weeks ago.  Now, I just put together some batches of overnight oats a couple times a week, and then I have a tasty and filling breakfast every morning.

Today's version consists of vanilla oats, with lemon blueberry compote layered on top.  The oats are great just by themselves, but the compote is the perfect blend of juicy berries and lemon flavor, which pair wonderfully with the creamy oats!

I make the compote ahead and store it separately in the refrigerator, then I add a couple spoonfuls to my oats in the morning.


Overnight Oats with Lemon Blueberry Compote

Ingredients:

Oats:

2 c. oats
1 1/2 c. milk
1/2 c. plain yogurt
2 Tbs honey
3/4 tsp vanilla

Compote:

1 1/2 c. blueberries
1/4 c. water
2 Tbs sugar
1/2 tsp lemon extract

Directions:

Combine the oats, milk, yogurt, honey and extract in a quart-sized container, and place in the refrigerator overnight.

In a small saucepan, combine the blueberries, water, and sugar over medium-high heat, stirring often until the berries begin to burst and the mixture thickens (about 10 minutes).  Remove from the heat, and stir in the lemon extract.  Allow the mixture to cool, and store in a covered container in the fridge until ready to use.

In the morning, layer the oats with the compote.
