Scrumptious Creamy Caramel

I realized the other day, as I was thinking up some delicious new caramel recipes, that I haven't posted a single caramel recipe since I started this blog a year ago.  Naturally, this needed to be rectified, since homemade caramel is infinitely better than store bought (in my humble opinion, anyway).

This caramel is super creamy, and perfect to top desserts with, or eat by the spoonful straight from the jar...if that is your type of thing!

Scrumptious Creamy Caramel


2/3 c. heavy cream
1 c. brown sugar
1/2 c. butter
1 tsp vanilla


In a small sauce pan, melt the butter of medium heat.  Add the brown sugar and whisk until completely combined and thick.  Stir in the heavy cream and whisk in until the mixture is smooth.

Cook until the mixture comes to a slow boil, thickens and lightens in color (5-7 minutes).  Remove from heat and stir in the vanilla until smooth.

Pour mixture into glass jars and store it in the refrigerator (the mixture will thicken as it cools)
