Funfetti Truffles

My best friend is having a baby in February, and we had her baby shower about a week ago.  This girly friend of mine has a thing for funfetti.  There is this shop in her state that sells "cake bites", and her favorite ones are the funfetti flavored bites.

So I figured, as part of my baby shower contribution, that I would make her some funfetti truffles!  These little bites of goodness taste just like funfetti cake batter, and are full of colorful sprinkles.  I coated them in pink for the baby shower, but you can coat them in white, chocolate, or any other color of your choice.




















Funfetti Truffles

Ingredients:

1 c. funfetti cake mix
1 1/2 c. flour
1/2 c. unsalted butter (softened)
1/2 c. sugar
1 tsp vanilla
1/8 tsp salt
3-4 Tbs milk

Coating/Topping:

1 bag (16 oz) colored candy melts
white chocolate for drizzling
sprinkles (optional)

Directions:

In a medium bowl, mix together the butter and sugar until fluffy.  Stir in the cake mix, flour, vanilla and salt.  Add the milk until you achieve a doughy consistency.

Form the dough into teaspoon-sized balls, and place on a silpat-lined baking sheet.  Place the truffles in the refrigerator for 10-15 minutes while you melt your coating.

Melt your candy melts according to the package directions.  Dip each truffle in the melted coating, shaking off the excess before returning it to the baking sheet to harden.  Drizzle with melted white chocolate or sprinkles.

Allow the coating to harden before eating.  Store in the refrigerator.
