Since we moved to Pocatello four months ago, we haven't really made any new friends. Which is a little strange, since we made so many in our last area. But such as it is.
Last week we went to a barbecue at an acquaintance's home, where a number of other couples and small families also were. While there, we met a couple that we really hit it off with. So, we're excited to get to know them better and do some activities together.
Barbecues are great for that sort of thing. Meeting people, eating good food, and trying to avoid the bees that want to eat your food too.
We brought this delicious fruit salad to the barbecue, and it was a hit. The vibrant colors and unexpected zip of the lime juice made for a very appealing side dish. It's quick, easy, and impressive at the same time.
Nectarine Fruit Salad with Honey Lime Syrup
Ingredients:
4 Nectarines (sliced)
16 oz strawberries (cut in half)
12 oz blueberries
12 oz blackberries
Syrup:
1/4 c. honey
1/4 c. lime juice
Directions:
Place all of your sliced fruit into a large bowl.
In a small bowl, combine the honey and lime juice (you can also do this in a pot on the stove if you want to heat the syrup, but it is not necessary). Pour the syrup over the fruit, and mix gently with a rubber spatula so that all the fruit is covered.
Refrigerate until serving. Stir again before serving.
