S'mores Truffles

S'mores are great.

They just scream summer to me, and I was super excited to learn that my hubby loves them!

There is one down-side to s'mores though...the sticky chocolatey mess that inevitably gets all over your hands and face when the marshmallow and chocolate get smooshed between the graham crackers.  To some, the mess might be part of the fun, but when you have a hyper-active puppy who tries to lick the remnants off of your fingers and face, it's not as delightful.

These S'mores Truffles take care of the sticky mess without sacrificing the full flavor that you come to expect with s'mores! I placed a mini-marshmallow in the center of some of the truffles, and placed half a mini-marshmallow on the others, just to mix it up, and both ways are amazing, and you may have to forcibly convince yourself to stop eating them once you start!



S'mores Truffles

Ingredients:

3 c. graham cracker crumbs (about 2 packages graham crackers, crushed)
3 Tbs butter
14 large marshmallows
4 oz cream cheese (softened)

12 oz chocolate for dipping
Graham Cracker crumbs
Mini-Marshmallows

Directions:

Place the graham cracker crumbs and cream cheese in a medium bowl.

In a small saucepan, melt the butter.  Stir in the marshmallows until gooey and melted.  Pour over the crumbs and cream cheese.  Stir the mixture together.  I ended up mixing it together with my hands to get everything well incorporated.

Form tablespoon-sized balls of dough and place on a baking sheet.  You can place a mini-marshmallow in the center and form the dough around it if you wish for a filled truffle.

Place the truffles in the refrigerator for about 10 minutes.

Melt the dipping chocolate.  Dip the truffles in the chocolate until covered.  Sprinkle with graham cracker crumbs and place half a mini-marshmallow on each truffle, if desired.
