Cranberry White Chocolate Drop Cookies

I love cranberries.  Always have.

My husband...does not.  Which on one hand is sad.  But on the other hand...gives me ALL of the cranberry goodness to myself!

These cookies are bursting with bright red cranberries, and contrasted by milky white chocolate chips in the delicately spiced, dense cookie that is perfect for dunking.

Cranberry White Chocolate Drop Cookies

Ingredients:

2/3 c. butter (softened)
2/3 c. brown sugar
2 eggs
1/2 tsp almond extract
1/2 tsp vanilla
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
2 c. flour
1 c. oats
3/4 c. dried cranberries
2/3 c. white chocolate chips

Directions:

Preheat oven to 375.

Cream together the butter and sugar until smooth. Add the eggs and extracts and mix until fluffy.  Stir in the salt, baking soda, cinnamon, flour and oats until the dough comes together.  Mix in the cranberries and chips until well incorporated.

Drop tablespoon-sized balls onto a silpat lined baking sheet.  Bake 8-10 minutes or until just barely golden.  These will not really flatten, so don't be alarmed when they don't.
