20-Minute Skillet Gnocchi

I love gnocchi.

And I love that I was able to introduce my husband to gnocchi.  And that he likes it too!  Which, when you are dealing with someone on the finicky side, is always a plus.

This dish is bursting with flavor.  The Italian sausage and tomatoes, simmered in garlic and spices, with little pillows of gnocchi...covered in cheese... it's delish!

And what's best, is that you can make this from start to finish and have dinner on the table in 20 minutes!  And with only one pan and one bowl to clean, your evening could't get any simpler!


20-Minute Skillet Gnocchi

Ingredients:

1 (17.9 oz) package of gnocchi
2 tsp olive oil
12 oz. Italian sausage
2 cloves garlic
1 can diced tomatoes
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic salt
1/4 c. heavy cream
1/2 c. mozzarella

Directions:

In a large skillet, heat the olive oil over medium-high heat.  Add the gnocchi and saute, stirring regularly until the gnocchi turns golden brown (about 8 minutes).  Remove the gnocchi to a separate bowl.

Add the Italian sausage to your skillet and cook until browned.  Drain any grease, and add to the bowl with the gnocchi.

Add the tomatoes, garlic, and seasonings to your pan and cook until the tomatoes are soft and the juices have reduced (about 6 minutes).  Add the sausage and gnocchi back to the pan and stir everything together.  Add the cream and mix well.

Top with mozzarella and allow it to melt (I like putting it under the broiler for a little bit).
