Peach Pina Colada Freeze

Do you ever wish you could just blink your eyes and whisk yourself off to a tropical island for a week or two? No responsibilities, no cell phone, nothing to think about or care about as you sit in the sun, hear the waves crash on the shore, and have frosty pina coladas served to you by a suntanned waiter named Rico...

aaaand I'm back.

Well, I may not be on a tropical island in the sun, but with how warm it is in our house, it sometimes feels like it (minus the sand and bugs).

Because our new residence has no central air, Bruce and I take turns moving our fan back and forth between the bedroom and the living room, but it still manages to be sweltering (and it's only May!).  So I decided to beat the heat by blending up a tasty frosty treat.  In just a couple minutes I was sipping on a delicious blend of peach, pineapple and coconut, fit for any tropical excursion...from the comfort of my kitchen table, and so can you!





















Peach Pina Colada Freeze

Ingredients:

1 c. frozen peach slices
1/4 c. frozen pineapple
1/3-1/2 c. milk (depending on how thick you want it)
1/2 tsp coconut extract
1 Tbs sweetened coconut
honey (*optional.  I did not add honey but if you like things on the sweeter side, this would be good)

Directions:

Place all ingredients in your blender, and blend until you reach your desired consistency (adding milk for a thinner treat).
