Peanut Butter Chocolate Chip Pancakes

Today is my hubby's birthday!

He chose his birthday dinner (my Shredded Chicken Enchiladas), but I wanted to do something special for his birthday breakfast, so I decided to combine some of his favorite things together and make peanut butter chocolate chip pancakes!  And top them off with some peanut butter maple syrup!

I was nervous about how they would be, since I am not a fan of peanut butter myself, but he loved them!  Birthday breakfast success!


Peanut Butter Chocolate Chip Pancakes

Ingredients:

1 c. plus 2 Tbs flour
2 Tbs sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 c. peanut butter
1 tsp vanilla
1 egg
1 c. milk
1/2 c. chocolate chips

Syrup:

2 Tbs peanut butter
1/4 c. maple syrup

Directions:

In a small bowl, sift together the dry ingredients.  In a separate bowl, whisk together the egg, vanilla, milk and peanut butter until smooth.  Stir in the dry ingredients until thoroughly combined, then add the chocolate chips and stir in completely.

Cook your pancakes on a hot griddle.

To make your syrup, heat the peanut butter in a small bowl in the microwave for about 30 seconds.  Stir in the maple syrup until smooth.  Pour over your pancakes.
