Homemade Eggnog

As I am sure you may have noticed, we love eggnog around here.  We don't exactly hide that fact too well, do we?

But it's not always possible to stock up on the store bought stuff...especially since grocery shopping is one of my least favorite things to do...seriously...I hate it.  However, since I really wanted a glass of eggnog, and didn't have any on hand, I knew I would have to make my own.

While it is not as thick as the store bought stuff, it is just what I needed to cure my eggnog craving, and Bruce loved it!


Homemade Eggnog

Ingredients:

2 egg yolks
1/4 c. sugar
pinch salt
1 c. milk
1 c. whipping cream
1 tsp rum extract
1/2-1 tsp nutmeg
1 c. heavy cream

Directions:

In a double boiler, whisk together the egg yolks, sugar and salt until smooth.  Slowly whisk in the milk and whipping cream until thoroughly combined and cook in the double boiler until the mixture thickens enough to cover the back of a metal spoon (about 15 minutes).

Remove from heat and stir in the rum extract and nutmeg.  Cool the mixture in the refrigerator until completely chilled.

Whip the heavy cream in a medium bowl until stiff peaks form.  Stir into the chilled mixture and serve.  Top with additional nutmeg if desired.
