Eggnog Truffles

The perfect eggnog truffle is here!  The center is rich and creamy, with the perfect eggnog taste!

I swear, the only thing better is drinking actual eggnog...which, I will admit, I could go for a glass right about now.  These are easy, with a delicious result at the end of all your "hard" work!


Eggnog Truffles

Ingredients:

12 oz white chocolate
1/8 tsp salt
1/4 c. butter (room temperature)
1/3 cup eggnog
3/4 tsp nutmeg

Coating/Topping:

12 oz. white chocolate
nutmeg

Directions:

Place the white chocolate, butter, and salt in a heatproof bowl.

In a small saucepan, heat the eggnog until it comes to a boil.  Pour the eggnog over the chocolate and other ingredients.  Stir with a fork until the mixture is smooth and the chocolate is completely melted.  If the chocolate is not fully melted, you can place the bowl in/over a pot of simmering water (double boiler) and stir it until the chocolate melts (or you could microwave it for a few seconds).

Stir in the nutmeg until fully incorporated.

Place a piece of plastic wrap down onto the surface of your mixture and refrigerate until firm (I left mine overnight, but if you do it all in one day, allow it to chill at least 4 hours).


Roll mixture into small balls and place on a silpat lined cookie sheet and return to the refrigerator for an additional half hour to an hour.

Melt the chocolate (I use the double-boiler method). Remove the truffles from the fridge and dip each ball into the chocolate, turning it to cover the entire surface.  Remove excess coating by lightly tapping along the side of the bowl and then place it back on the baking sheet to set.  Sprinkle with nutmeg before the chocolate completely hardens.

Store in the refrigerator.
