Pumpkin Spice Spritz

Spritz are one of those cookies that I always associate with Christmas.  We would make peppermint spritz or almond spritz in red and green with various types of sprinkles or colored sugar on top.

I've been trying to sell some of my excess kitchen gadgets that I just do not use anymore, and I asked Bruce if we should sell the cookie press.  He had never had spritz cookies before, but he said he wanted me to keep it.

So, I decided that I would introduce him to the world of spritz, but I wanted to make them with a more autumnal flavor than the peppermint or almond.  So we made pumpkin spice spritz!



Pumpkin Spice Spritz

Ingredients:

3 1/2 c. flour
1 tsp baking powder
1 1/2 c. butter (softened)
1 c. sugar
1 egg
1 tsp vanilla
2 tsp pumpkin spice
food coloring (optional)

Directions:

Preheat oven to 400.

Cream together butter and sugar until fluffy.  Add egg, vanilla and pumpkin spice and mix thoroughly.  Stir in flour and baking powder until the dough comes together.  Add food coloring if desired.

Spoon dough into the cookie press and press cookies out onto an ungreased (or silpat lined) cookie sheet.

Bake 7-8 minutes or until the bottoms just begin to brown.
