Crock Pot White Chicken Chili

When I was growing up, chili was always the hearty red chili with lots of beans, ground beef, tomatoes, and peppers.  It wasn't until recently that I even heard of white chili.  But oh my heavens, is it delicious!

I'm pretty sure I could eat this every single day.

It's creamy, cheesy, and has just the right amount of flavor to make it super comforting.















Crock Pot White Chicken Chili

Ingredients:

4 c. chicken broth
2 c. shredded chicken
1 small can green chilies
2 cans white kidney beans
2 cans great northern white beans
1 1/2 tsp cumin
1 tsp garlic powder
1 tsp oregano
1 1/2 tsp white pepper
1 c. sour cream
2 1/2 c. Mexican blend cheese
salt and pepper to taste

Directions:

Combine broth, chicken, chilies, beans, cumin, garlic powder, oregano, and white pepper in your slow cooker.  Cook on high for 2-3 hours, or until heated through.

Right before serving, stir in sour cream and cheese until melted through.  Use salt and pepper to taste.

I added a few drops of lime juice to mine and it was amazing!  You can top yours with corn chips, more cheese, whatever you like!
