Pomegranate, Pear & Quinoa Salad

I had lunch with a couple friends today.

I decided to bring a salad, and I only really knew that I wanted to use up some of my pomegranate and some leftover quinoa from my dinner on Monday.

I took my inspiration from a Strawberry Spinach salad that I had a while ago, and ran with it.

This salad has the sweetness of pears, the crunch of pomegranate and candied pecans, the subtle bite of feta cheese, and I topped it with a great pomegranate vinaigrette.


Pomegranate, Pear & Quinoa Salad

Ingredients:

5 oz. package Spinach & Arugula mix
1 pear (diced)
2/3 c. pomegranate arils
1/2 c. feta cheese
1/2 c. candied pecans (or plain)
2/3 c. cooked quinoa

Directions:

Wash spinach and arugula, then pat dry.

Place all ingredients in a large bowl, add vinaigrette and toss lightly to coat.

Serve immediately.
