We used to eat them with peanut butter (something I no longer enjoy), frosting (something I also no longer like), or just as is.
So imagine my delight when I was visiting my roommate Christine's family a number of years ago and her mother had just made homemade graham crackers. HOMEMADE graham crackers! I was floored! They were amaaazing!
I spent the next few weeks dreaming about those graham crackers, and persuaded my roommate to get the recipe from her mom for me.
Recipe adapted from Maria Barton
Ingredients:
3 c. graham flour
1/2 tsp salt
1/2 tsp baking soda
1/2 c. oil
1/2 c. brown sugar
1/3 c. honey
1 egg
1/4 c. evaporated milk
1 tsp lemon juice
1 tsp vanilla
Directions:
Preheat oven to 375.
In a large bowl, mix oil, sugar, honey, eggs, milk, lemon juice and vanilla. Add graham flour, salt, and baking soda and mix thoroughly.
Roll dough flat and thin onto a greased & floured or silpat lined cookie sheet. Cut into desired shape and bake for 10-12 minutes.
