Beef & Broccoli

Chinese food...good heavens, I love Chinese food.  It was one of those rare indulgences that we would get every great once-in-a-while.

As I grew older, I was able to have it more often (since I was just feeding myself and not a large family like my parents had to), but since moving to Idaho, it has been a challenge to find dependable, good Chinese food.

In the meantime, I have resorted to making my own Chinese food at home.  This beef and broccoli recipe is super easy, and is made in the crock pot!  Seriously, you can't beat how easy this one is.


Beef & Broccoli

Ingredients:

1 c. beef broth
1/4 c. soy sauce
1/4 c. oyster sauce
1/4 c. brown sugar
1 Tbs sesame oil
3 cloves garlic
2 lb boneless beef chuck roast, thinly sliced
1/4 c. water
2 Tbs cornstarch
2 heads broccoli (cut into florets)

Directions:

In a medium bowl, whisk together beef broth, soy sauce, oyster sauce, brown sugar, sesame oil and garlic.

Place beef in crock pot. Cover with sauce and stir to combine. Cover and cook on low for 3 hours.

In a small bowl, whisk together 1/4 cup water and cornstarch.

Stir cornstarch mixture and broccoli into crock pot. Cover and cook on high heat for an additional 30 minutes.

Serve over rice.
