Sweetened Condensed Milk

Have you ever found yourself without an ingredient and you couldn't (or didn't want to) run out to the store just to pick up the one missing item?

That has happened to me with sweetened condensed milk.  Twice.

Both times I decided to just make some instead using a can of evaporated milk.  Now, I will tell you that this is not something I would make on a regular basis, it is pretty time consuming since you have to constantly stir it for well near half an hour (yes, you read that right...), but it works when you really just can't get to it any other way...and it tastes just the same.

So, in case you are ever in a condensed milk bind, here it is! (Yes, it does have more of a caramel color than what you get out of a can, but I promise it works and tastes exactly the same)





















Sweetened Condensed Milk

Ingredients:

1 c. sugar
12 oz can evaporated milk

Directions:

In a medium or large sauce pan (I promise you do NOT want to use a small one...it will foam up and make a big, big mess), combine the milk and sugar and cook over medium-high heat, stirring constantly (or as constantly as you can without going stir-crazy...).

You need to cook the mixture for anywhere from 20-30 minutes, but closer to 30, otherwise it will not thicken like you want it to, and you'll merely be left with sweet milk.

The mixture will further thicken as it cools, and it should be kept in the fridge if you do not use it all immediately.
