Creamy Chicken Tortellini Soup

I have a friend who is sick, and I decided I was going to take her some soup.

So after taking mental inventory of the contents of my kitchen, I knew that a Creamy Chicken Tortellini Soup was going to be the perfect, comforting soup to take her.

This soup is absolutely delicious, I ended up eating some of the leftovers for dinner, and it is quickly becoming a favorite of mine.



Creamy Chicken Tortellini Soup

Ingredients:

2 Tbs butter
1/2 small onion (chopped)
3 cloves garlic
1/4 tsp salt
1/4 tsp crushed red pepper (optional)
1 tsp thyme
1/2 tsp pepper
1 Tbs chicken seasoning
1 chicken breast (cooked and shredded)
2 1/4 c. chicken broth
9 oz tortellini
1 jar homemade cream of chicken soup (or 2 10oz cans cream of chicken soup)
2 c. half & half
1/3 c. frozen spinach (thawed and drained)

Directions:

In a small saucepan, boil 1 3/4 c. chicken broth. Add tortellini and cook until tender (about 8-10 minutes).

Meanwhile, in a medium saucepan over medium heat, melt butter and saute onion and garlic for 2 minutes.  Add half & half, seasonings, shredded chicken, spinach and remaining 1/2 c. chicken broth.  Stir in pasta and any remaining chicken broth from the pan.  Cook an additional 2 minutes or until evenly heated.
