Cheese & Tomato Quiche

Well, I've gone and done it.

I've transitioned into a food blogger.

Basically, this blog is for all the recipes that I have been posting on my personal blog, and for any future recipes that I make and want to document and share with the mystical interwebs.

To start things off, I thought I'd post the recipe for a quiche (very fitting given the blog name).  Quiche is super easy, and super delicious, so it is always a winner.  And as a bonus, it works for any meal!


Cheese & Tomato Quiche

Ingredients:


2 Tbs butter
1 c. chopped onion
3 eggs
2/3 c. milk
1 c. shredded Swiss cheese
1/2 c. grated Parmesan cheese (plus more for sprinkling)
1 tsp dill
1/2 tsp salt
10 cherry tomatoes (or more if you choose)

1 (9 inch) pie shell (unbaked)

Directions:

Preheat oven to 350.

Press unbaked pie dough into a 12 inch tart pan and set aside.

Melt butter in a skillet over medium heat.  Add onion and cook until translucent and then set aside.

In a large bowl, beat the eggs, milk, Swiss cheese, Parmesan cheese, dill and salt.  Add onion.  Pour mixture into prepared pie shell.  Place the cherry tomatoes on top of the mixture and sprinkle with additional Parmesan cheese.

Bake for 55 minutes.  Let stand 10 minutes before serving.
